What is Ramen Tare?

Ramen tare is a concentrated flavoring agent used to add depth and complexity to ramen broth. It is an essential component of a flavorful bowl of ramen and can be a great way to customize a bowl of ramen to your own tastes. Tare is usually made up of a combination of shoyu (Japanese-style soy sauce), mirin, sake, and konbu, as well as other secondary ingredients like niboshi (dried sardines), lemongrass, and chili flakes. It is typically added to the ramen broth to taste, unless the recipe specifies otherwise.

Recipe for Miso Ramen Tare

Here is a recipe for a delicious Miso Tare that you can use to make a rich and flavorful bowl of ramen:

Ingredients:

• ⅓ cup mirin
• ⅓ cup shoyu (Japanese-style soy sauce)
• ¼ cup sake
• ¼ cup dashi stock
• 1 tablespoon miso
• 1½ teaspoons brown sugar
• 1 green onions, thinly sliced

Instructions:

  1. Combine all the ingredients in a saucepan and bring to a simmer.
  2. Simmer until the tare reduces to ½ cup, about 15 minutes.
  3. Strain any solids and let the tare cool.
  4. Store in an airtight container in the refrigerator for up to two weeks.

When it comes time to make your ramen, add two tablespoons (30ml) of tare in each of four warmed serving bowls. Ladle around 1 ½ cups (350ml) of blended broth into each bowl. Taste broth for seasoning, then garnish with your favorite toppings. Enjoy!
